Something that I think all apps lack, is support for variants of a language.
Example: Suppose there’s a system for switching variants (even real-time, why not?) and then a Brazilian Portuguese course is created. Someone from Portugal can skim through the course and, every time there’s a sentence that would be different in Portugal, they could “translate” the sentence to a Portugal-Portuguese equivalent.
This could be a simple thing to implement (I think) and it would be a practical way of having something new that most apps ignore.
The only app I’ve seen that takes different accents into account is Busuu, at least for its Dutch course. The whole course is focused on both Standard Belgian (Southern) Dutch and Netherlandic (Northern) Dutch variants, with both accents, and interesting cultural insights about both countries.
This is also an interesting take, but I think this requires too much planning and coordination for an Open-Source, community driven project (different native speakers of different variants would have to be constantly exchanging and discussing).

So, this would depend on having multiple course creators from multiple regions, but –
Here is how I’d implement it.
A contextual tooltip that appears if you hover over a word, perhaps with ‘dialects/variations enabled’ in the corner of the UI.
On enabling that, which is a clickable, you’d get your different spellings and pronunciations.
Naturally, because spelling and pronunciation differences can get pretty wild pretty fast, this makes a lot more work for course creators!
But actually having tooltips (or other solutions) for written language, at least, could be manageable.
Depending, again, on the time and willingness of course creators to provide as such.
Since they are adding language variants, I believe that its just gonna be different languages as options or it shows “Portuguese” and when you click on it it lets you choose the variant being used with a setting, buts its probably gonna show as separate courses
